I have had this
recipe for rhubarb flapjack featured in the April 2010 edition of Country
living in my mind for far too long.
We live in a town
house with a relatively small garden so I plant a lot of items in terracotta
pots and amongst these is my rhubarb plant that somehow has managed to survive
the last two harsh winters.
The plant was
looking lush so I decided that it was at very long last time to bake!

I couldn't find the firm oats that were recommended so I decided to use the honey granola from
Dorset Cereals instead and black treacle (if you love bonfire toffee then you will love this crumble) rather than the suggested golden syrup.
Having
chopped the ripe rhubarb stems I realised that there was not enough to bake
with and added some lovely autumnal coloured apples to the mix.

Instead of
ginger I used cinnamon (so much for following the recipe).
I scooped into bun cases to create mini crumbles (blackened because of the treacle).
Hello there - I stumbled across you when my eye was caught by the lovely profile image of the vintage toy horse on another blog! I'm delighted that I chose to take action because your blog is absolutely delightful. I'm a complete novice in the garden, but am slowly finding my way - I planted some rhubarb over a year ago, and it just disappeared into the hedgerow, so I am delighted to see that it can grow so abundantly in a pot - that is definitely something that I will now try. The little crumbles look gorgeous too - yum. Apart from sharing my name (I too am Paula) you appear to also be living my dream - I would LOVE to have a little vintage shop - but in the mean time I must be content to shop at others who have been brave enough to make the leap, and I must say that I am quite excited by the look of your quilts. ReplyDeleteHi Paula, a huge thanks for writing to me with the kindest of words. My business is relatively new (my young daughter forced the life change) but I have been collecting for years. The wooden horse is a favourite of mine.I would love a real shop, which would be the dream. The rhubarb is quite robust & thankfully just gets on with it & I hope to plant a lot more this year. The crumble is lovely if you like dark toffee. My partner was not too impressed but my sweet-toothed 6 year old loved it. I am really pleased to have 'met' you too and I wish you all the very best with the rhubarb, Paula xxx
